Making these tea cookies is a breeze - just mix, scoop, and bake, and the reward is a batch of irresistibly soft, gently spiced cookies with cozy ginger warmth and mellow honey sweetness that taste like pure comfort. Follow the recipe below:
Main Ingredients:
1 cup butter
1 cup sugar
2 tablespoon brown sugar
1 cup Tu-Bees ginger flavoured honey
2 eggs
2 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 tablespoon fresh or minced ginger (ground is great too)
1 tablespoon cinnamon
4 1/2 cups flour
2 tablespoon cornstarch
1/2 teaspoon salt
Topping:
1/2 cup sugar & 1 tablespoon cinnamon
Steps:
1. Melt your butter, honey, brown sugar - 30 seconds increments in the microwave
whisk and combine
2. Allow your mixture to cool down for a few minutes then add in the eggs, vanilla and whisk until combined.
3. Fold in your flour, baking soda, baking powder, ginger, cinnamon, cornstarch, and salt just until the flour mixture disappears. The dough will be super soft.
4. Wrap the bowl with plastic wrap and chill in the fridge for one hour and 15 minutes.
5. Preheat the oven to 325F 15 minutes before you are ready to pull the dough out of the fridge
6. scoop 2 tablespoon size balls and roll into a circle
7. Roll each one into your sugar/cinnamon mixture and place on your baking sheet
8. Bake for 10-13 minutes
9. let them cool for a few minutes before moving to the cooling rack.
