Whole Wheat Apple Honey Carrot Muffins

2 peeled & shredded apples
4 cups of peeled and shredded carrots (approx. 4-5 medium carrots)
4 cups of whole wheat flour
2 cups melted coconut oil
1/2 cup of Tu-Bees Cinnamon flavoured honey
6 tsps. baking powder
6 eggs
1 tsp. salt
2 cups white sugar
2 Tbsp ground cinnamon
1 cup of raisins (optional)

Preheat your oven to 350 degrees.  Grease and/or line your muffin pan.
Whisk your eggs, sugar, oil and honey together.  In a larger bowl, sift together your flour, salt, baking powder and cinnamon.  Pour your wet ingredients into your dry ingredients and fold together. Add your apples and carrots into the mix and lightly fold in just until blended.  Fill your muffin tins to the rim.

Bake for 25 - 29 minutes and check on them often so they do not burn.  Let stand for 10 minutes and enjoy!
